Quick, Easy, & Delicious: My One-Pan Lemon Garlic Chicken & Veggies Recipe for Busy Nights

This dish is the ultimate trifecta: it’s quick, easy, and incredibly nutritious. Perfect for busy weeknights or whenever you need a no-fuss meal, this recipe brings together tender chicken breasts, crisp veggies, and a zesty lemon garlic sauce—all in one pan. Not only does this mean fewer dishes to wash (yay!), but it also locks in all those amazing flavors, making each bite as mouthwatering as the last. What You’ll Need:

-2 chicken breasts or thighs, cut into bite-sized pieces (optional)
-1 zucchini, sliced
-1 bell pepper, sliced
-1 red onion, cut into wedges
-1 cup cherry tomatoes
-2 tbsp olive oil or avocado oil
-3 cloves garlic, minced
-Juice of 1 lemon
-1 tsp dried oregano
-Salt and pepper to taste
-Fresh parsley, chopped (optional)

Instructions:
1. Preheat: Set your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup!
2. Prep the Chicken and Veggies: In a large bowl, combine the chicken, zucchini, bell pepper, red onion, & cherry tomatoes. Drizzle with oil, add minced garlic, lemon juice, oregano, salt, and pepper. Toss everything together until evenly coated.
3. Bake: Spread the chicken and veggies evenly on the prepared baking sheet or cast-iron pot. Bake for 20-25 minutes or until the chicken is cooked through and the veggies are nice & tender.
4. Serve: Garnish with fresh parsley if you like, and enjoy this flavorful, all-in-one meal straight from the oven. So simple, yet so tasty!🔥
